A small, yellow-fleshed heirloom, far superior to others for salads. Originally brought to this country by early German settlers. Tubers are long and finger-shaped, measuring about 1 inch in diameter and 2 to 4 inches in length. Yellow skin and flesh are uniquely flavored and delicious. Boil with skins on for the best taste; also excellent when fried. Midseason.
