An unusual variety with excellent flavor. Just the thing for delicate sauces, cream soups, and stews. Plump bulbs are flat-rounded shapes with coppery-red outer skin that peels easily. Purple-tinged white flesh has a spicy, rich flavor, yet it is mild when cooked. Stores well.
